For the Cobbler Batter
- 1/3 cup unsalted butter, melted
- 3/4 cup whole milk
- 2 teaspoons vanilla extract
- 1 1/2 cups sugar
- 1 1/2 cups flour
- 2 1/4 teaspoons baking powder
- 3/4 teaspoon salt
- 2 teaspoons cinnamon
- 1 1/2 cups brown sugar, packed
- 1 1/2 cups hot water
For the Topping
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 350°F. Spread the melted butter evenly in a 9×13 baking pan.
- In a large bowl, whisk together the milk, vanilla, and sugar.
- Add the flour, baking powder, salt, and cinnamon to the wet ingredients; whisk until just combined into a batter.
- Spoon the batter gently and evenly over the melted butter in the pan, being careful not to mix the layers.
- Sprinkle the packed brown sugar evenly over the entire layer of batter.
- Gently pour the hot water over the batter and sugar.
- Bake for 30-35 minutes until the cobbler is golden brown and mostly set in the center.
- While the cobbler is still hot, mix the topping sugar and cinnamon together in a small bowl.
- Sprinkle the cinnamon-sugar topping evenly over the hot cobbler.
- Let the cobbler cool slightly before serving for the best texture.
Notes
Serving: Best served warm with a generous scoop of vanilla ice cream or a dollop of whipped cream.
Storage: Store the cobbler covered in the refrigerator for up to 4 days. It can also be frozen for up to 2 months; thaw before reheating.
